My husband is happy to chew tough greens, I’m not, so I tend to blend kale into sauces for myself. Think pesto style on pasta or add tahini or your favorite nut butter for creaminess. I sometimes do larger amounts and end up just eating a green mess. Good thing I wear an apron even during meal times ;0)

After the first few picks, my daughter, who does all the cooking, refused to cook it. The flavor was good, it was just too tough to eat. An electric knife or better, chainsaw, would have been better used on it. This year, I am growing the Russian variety. It has a similar flavor, but is much more tender, even when using the larger leaves. To me, the dinosaur should be left in the ground for archeologists where it belongs. 🙂
